Fumaric acid can be used as acidity regulator

Fumaric acid, also known as fumaric acid, violet acid or lichenic acid, namely fumaric acid (IUPAC name (E)-butenedioic acid), is a colorless, flammable crystal composed of Carboxylic acids derived from butene. Burning fumaric acid releases irritating maleic anhydride fumes. It tastes like fruit and is found in Corydalis, Boletus, Lichens, and Icelandic Nori.

    Description

Fumaric acid is used in the production of unsaturated polyester resins. This type of resin is characterized by good chemical resistance and heat resistance; the copolymer of fumaric acid and vinyl acetate is a good adhesive. Copolymer with styrene is the raw material for manufacturing FRP. The plasticizer made by fumaric acid is non-toxic and can be used for vinyl acetate latex in contact with food. This product is a fine chemical intermediate such as medicine and optical bleaching agent. It is used in the production of antidote dimercaptosuccinic acid in the pharmaceutical industry. The fumaric acid is neutralized with sodium carbonate to obtain sodium fumarate ( [17013-01-3]), and then replaced with ferrous sulfate to obtain iron fumarate, which is used to treat small red blood cell anemia with iron-rich drugs. This product is used as a food additive-sour agent, used in refreshing drinks, fruit candy, jelly, ice cream, etc., most of which are used in combination with the sour agent citric acid. The monosodium salt made by the reaction of fumaric acid and sodium hydroxide, It is also used as a sour seasoning and as an intermediate for synthetic resin and mordant.

    Application

In food mainly used in meat products, fish products processing and so on. Fumaric acid can be used as acidity regulator, acidifier, antioxidant, salting promoter and spice. This product has a strong buffer effect to keep the aqueous solution at about pH3.0, and has an important role in antibacterial and mildew prevention, at the same time, it has astringent taste, is one of the most acidic solid acids, low absorption rate, and helps to extend the shelf life of powder products. When fumaric acid is changed into sodium fumarate, the water solubility and flavor are better.
