Sodium propionate - a common food additive
Description
Sodium propionate is an effective inhibitor of the growth of certain molds and some bacteria in bakery goods. It is usually
preferred in non-yeast leavened bakery products because the calcium ions' of calcium propionate interfere with the chemical
leavening agents. In those bakery products, such as cakes, tortillas, pie fillings etc., chemically leaved agents are used
(e.g.baking powder). sodium propionate is easy to handle and easy to incorporate into flour. It is a safe compound when
encountered at the low levels found in food.

Usage
Sodium propanoate is primarily used in baked goods to extend the shelf life and can also be used in the following foods in to inhibit the growth of mold and other microbes :
● Nonalcoholic beverages
● Cheeses
● Confections and frostings
● Gelatins, puddings, and fillings
● Jams and jellies
● Meat products
● Soft candy
How to Use Sodium Propionate in Bread?
Either of 3 ways is ok:
1. Blending it with other dry ingredients
2. Dissolving it first in water prior to use, due to its good solubility in water
3. Added at the end of the dough making
