Ascorbic Acid is a naturally occurring organic compound with antioxidant properties. It is a white solid, but impure samples can appear yellowish.     Ascorbic Acid is a polyhydroxy compound with the chemical formula C6H8O6. Vitamin C has a strong reducing property and is easily oxidized to dehydrovitamin C, but the reaction is reversible, and ascorbic acid and dehydroascorbic acid have the same physiological function. However, if dehydroascorbic acid is further hydrolyzed to form diketogulonic acid, the reaction will be irreversible and the physiological efficacy will be completely lost.
